So what’s to stop someone now from buying a round of drinks and food on the plane and then canceling the card before the charge hits?

technically you can dispute that charge and get your money back. Although it is your charge the Merchant has a responsibility to charge within a reasonable time. they are required to bill you within 6 months from when the purchase occurred and you as a Consumer have 60 days from the date on your statement, with the charge, to dispute it. IE this statement was printed 06/01/2013 so you have 60 days from that date to dispute. some banks will even give you more time than that.

I called Froniter customer service and they said that they only pull credit card info off of their machines at certain locations, Milwaukee being the most common download location. The customer service rep said it can take months (I last flew in October and just got the charge today) for the credit card machines to make it to Milwaukee. She verified that my charge was in fact correct- I had purchased a sandwich in flight and now 8 months later am finally being charged.
